By eating vegetables raw you lock in all the nutrients so this salad is wonderfully healthy and tasty. It’s great alongside a plate of cold meats and cheeses or equally fantastic with a succulent steak and chips.

- Finely shred half a red cabbage 
- Mix with 3 grated carrots and a teaspoon of Dijon mustard 
- Then add several good splashes of A Little Bit Lemon and Tarragon Dressing for a delicious accompaniment to many meals
