Red Cabbage Coleslaw

By eating vegetables raw you lock in all the nutrients so this salad is wonderfully healthy and tasty. It’s great alongside a plate of cold meats and cheeses or equally fantastic with a succulent steak and chips.

 

There are only three simple steps to follow - making it a super quick and easy side dish to prepare:

  • Finely shred half a red cabbage

  • Mix with 3 grated carrots and a teaspoon of Dijon mustard

  • Then add several good splashes of A Little Bit Lemon and Tarragon Dressing for a delicious accompaniment to many meals
