Asparagus with TARRAGON & LEMON DRESSING

This recipe makes use of seasonal asparagus which goes deliciously well with our Lemon & Tarragon dressing…like Spring on a plate! 

ASPARAGUS WITH LEMON & TARRAGON DRESSING 

Serves 2

  • 200g Asparagus

  • A Little Bit Tarragon & Lemon Dressing

  • Sour Dough & Poached Egg (optional)

  • Salt and pepper

Method

  1. Cook asparagus in boiling salted water for 2 mins. Drain and then toss with a little olive oil.

  2. Heat a griddle pan to very hot, place the asparagus on the griddle and cook for a few minutes, turning to make evenly charred..

  3. Divide the asparagus between 2 plates, season and drizzle with Tarragon & Lemon Dressing. Perfect as a light starter or lunch, as a side dish and also delicious served on top of some toasted sourdough along with a poached egg.
