This easy couscous salad is brought to life with salty feta cheese and succulent pimentos. Best of all, it comes together in less than 10 minutes and is easily adaptable to whatever you have on hand. We've used giant couscous here but feel free to try it with normal couscous or other grains such as quinoa or pearled spelt. Replace the feta with chickpeas for a totally vegan couscous salad. Our dressing of choice is our fresh and cooling A Little Bit Red Onion and Parsley Dressing because we all know parsley, couscous, and feta work beautifully together!
This beautifully balanced couscous salad is perfect for warm weather, so give it a try for your next picnic or barbecue!
Couscous Salad with Feta and Pimento
Ingredients
100g giant couscous
chicken or vegetable stock (or water)
4 handfuls of watercress
1 red onion, finely sliced
175g cubed feta cheese
1 jar of drained pimento
toasted pine nuts
chopped parsley and basil
Method
Measure 100g of giant cous cous into a pan of boiling chicken stock (or water if preferred)
Simmer for 6-8 mins until tender, drain and leave to cool
Meanwhile mix 4 good handfuls of watercress into a bowl with 1 small finely sliced red onion, approx. 175g of cubed feta cheese and a jar of drained pimento
Add in the cooled cous cous
Toss the salad together well with a couple of good slugs of A Little Bit Red Onion and Parsley Dressing
Finally scatter a handful of toasted pine nuts, chopped parsley and basil on the top for a fabulous finishing touch
