Feta, pea and mint dip

Mint and peas go so well together. This recipe adds feta and tahini to the mix to create a hummus-like dip that's perfect for summer picnics and easy lunches. 

FETA, PEA & MINT DIP

  • 1 tbs Olive oil

  • ½ chopped onion

  • 2 cups peas fresh or frozen

  • ¾ cup of water

  • 100g feta cheese

  • 2 tbs Tahini

  • 2 tbs sour cream

  • 3 handfuls of chopped mint

  • Juice of ½ lemon

  • Pepper & Salt to taste

METHOD:

  1. Heat olive oil in a pan and add onion. Saute onion until soft and translucent but not browned.

  2. Add peas to the pan and cover with the water, bring to the boil and cook gently for 5 mins. Drain.

  3. Put the peas and onions into a food processor and add all the remaining ingredients. Blend until you have a rough puree. Add salt and pepper to taste.

  4. Serve with warm pita bread or crackers.
